Flour tortillas
4 boneless, skinless chicken breasts, grilled and chopped
2 cups cooked rice
2 Tbsp butter
1-15 oz can black beans, rinsed and drained
2-12 oz cans fiesta style or Mexican style whole kernel corn, drained
½ cup green onions, chopped
½ cup red onions, chopped
2 jalapeño peppers, finely chopped without seeds
1 small can black olives, sliced
2 Roma tomatoes, chopped and seeded
¼ cup of fresh cilantro
Garlic salt to taste
½ cup Italian dressing
1 cup finely shredded cheddar cheese
Sour cream
2 avocados, peeled and sliced
2 Tbsp lime juice

Directions:
Directions:
Grill chicken. Cook rice according to package directions and immediately add butter; mix well until butter is melted. Combine in a separate bowl black beans, corn, onions, peppers, black olives, tomatoes, cilantro, garlic salt, Italian dressing. Mix carefully to not damage the skin on beans.

On each of the tortillas put some rice, chicken, black bean and corn mixture, cheese. Roll them up and put in a 9x13 baking dish. Bake at 350° for 15-20 minutes or just serve immediately. Serve with sour cream and sliced avocados that have been mixed with the lime juice.
