1 lb of Cod or Tilapia
¼ cup Olive oil
4 limes (to squeeze for lime juice)
1 tsp cumin
Salt and pepper to taste
2 California avocados (1 pound)
1/2 cup sour cream
3 tablespoons whipping cream
2 tablespoons finely chopped cilantro
2 tablespoons lime juice
1/4 teaspoon chopped garlic
1/4 teaspoon salt

Directions:
I thaw fish in the fridge, wash it, and then store it in the concoction of olive oil, lime juice, cumin, a little salt & pepper. When ready to cook, put olive oil in the pan, let it heat, and then put the fish in. I squeeze lime juice over it throughout cooking. It's ready when it's white and flaky. I serve fish on warmed corn or flour tortillas. I cut extra lime wedges so people can squeeze extra lime flavor if they want. Shredded cabbage or coleslaw mix is amazing on these.
And then I top with California Avocado Cream: Puree together avocados, sour cream, whipping cream, finely chopped cilantro, lime juice, garlic, salt.
