12 medium potatoes, boiled and mashed
1 cup milk
6 Tbsp. butter
3/4 tsp. salt
2-1/4 cups Velveeta cheese, cubed
2 eggs, beaten

Combine all ingredients. Pour into slow cooker. Cover and cook on High for 2-1/2 hours or Low for 3-4 hours.

Easter has become the holiday where I invite an extra family or couples to join us for brunch. This potato recipe is served annually (along with Eggs Au Gratin), and Rachel requests it throughout the year as well. I prepare it the night before, refrigerate the crock, then place it in the cooking shell in the morning to cook while we are at church.
