6 Red Snapper fillets
2 Tbsp olive oil
½ tsp butter

Relish:
1 medium tomato, diced
2 Tbsp red onion, finely chopped
1 cup chopped scallions
1 Tbsp minced garlic
3 Tbsp fresh basil
1 Tbsp Balsamic vinegar
2 Tbsp olive oil
Salt and pepper, to taste

Directions:
Directions:
In a medium skillet over medium heat, heat 2 Tbsp olive oil and butter. Add snapper and cook on each side for 2-3 minutes, starting with the skin side down. Remove the cooked fillets. Return skillet to the heat and pour in relish ingredients. Deglaze for about 15 seconds over high heat. To serve spoon relish over each fillet.
