1 Tbsp butter
1 can 14-15 oz crushed tomatoes
1 8oz tomato sauce
1 tsp dried basil
1 tsp dried oregano
2 cloves garlic minced
1 large onion chopped
1 cup Italian bread crumbs
1 cup parmesan cheese
2 eggs
1 tsp salt
1/4 tsp black pepper
6 boneless chicken breasts
1/2 cup vegetable oil
6 slices fresh mozzarella cheese

Directions:
Directions:
Saute chopped onion and when almost translucent add minced garlic. Cook for 2-3 mins more and add tomatoes, sauce, basil and oregano. Bring to a boil, then simmer for 20 mins or more.

Heat oil in large skillet. Mix bread crumbs and 1/4 cup of parmesan cheese. Beat eggs. Add salt and pepper. Beat chicken breasts until thin. Dip chicken in eggs and then in bread crumb mixture. Cook chicken until browned on both sides. Arrange in a single later in a 13 x 9 baking dish that has been sprayed with cooking spray.

Heat oven to 350. Pour tomato sauce over chicken. Sprinkle with the rest of parmesan cheese. Bake covered for 30 minutes. Remove the cover and top with mozzarella cheese slices. Bake 10 minutes longer or until cheese is melted.
