Ingredients:  
1 lb chicken
1 Tbsp olive oil
1 cup chopped green pepper
1/2 cup chopped onion
1 tsp cumin
1 clove garlic
8 corn tortillas
2 cans chicken broth
2 cans pinto beans
1 jar salsa verde (green olive/cilantro by Salpica is the best)
2 Tbsp cilantro
Fritos
Avocado

Directions:
Directions:
1. In a large pot, cook chicken in chicken broth
2. In a skillet saute pepper, onion, garlic with cumin in olive oil.
3. Cut tortillas into thin strips and then small squares
4. Take chicken out of pot and cut into bite size pieces
5. Put cut chicken, tortillas, sauteed pepper and onion, beans and salsa into pot and simmer
6. Garnish with cilantro
7. Serve topped with sour cream, Fritos and avocado if desired, and with cornbread!
