4 c.mashed potatoes
1/2 c. whipping cream
2 tsp. sugar
1 tsp.salt
2 1/4 c. flour--or less

Directions:
Directions:
Cool cooked potatoes. Grind potatoes with hand grinder so potatoes are smooth.

Add cream, sugar and salt.
Stir in flour a cup at a time.
You may not need the full amount of flour.

Work together and put in a roll. Cut off a piece and
roll on floured pastry cloth. Bake on lefse grill.
Use white Idaho russet potatoes because they are a drier flakier potato and not as much flour is needed. Set lefse grill on 375 to 400 degrees.

This is my Mother's recipe for lefse. The Larsgaard family has enjoyed this recipe through the years at Thanksgiving and Christmas and sometimes Mom would make lefse for other special gatherings throughout the year.
