4 c. sugar
2 c. whole milk
2 t. vanilla extract
1 c. peanut butter
1/4 stick butter, softened, divided

Using a paper towel, smear butter around the inside rim of a heavy dutch oven, about an inch wide. This helps keep the fudge from boiling over. Using remainder of butter, thoroughly butter bottom and sides of a 9 x 13 casserole dish.

In the dutch oven, combine sugar and milk. Cook over medium heat till mixtures starts gently boiling, Stir very sparingly. Cook till fudge reaches 234º on a candy thermometer, or soft-ball stage. Remove from heat and add vanilla extract and peanut butter. Beat fudge with a wooden spoon till the mixture starts losing its "gloss" and starts to harden on the sides of the pan. Immediately pour into buttered dish. After fudge starts to "set", but is still warm, cut into serving pieces.

I always make this candy in the fall and winter months. If the weather is humid, fudge will not set up right. If you want to make chocolate peanut butter fudge, just add 1/2 c. Hershey's cocoa to the sugar and mix sugar and cocoa thoroughly BEFORE mixing with the whole milk.
