1 lb. Italian sausage
1 chopped onion
2 clove garlic, minced
2 (14 oz.) cans beef broth
1 (14 oz.) can chicken broth
1 (14.5 oz.) can Italian-style stewed tomatoes
1 c. sliced carrots
1 (14.5 oz.) can great Northern beans, undrained
2 small zucchini, cubed
2 c. spinach - packed, rinsed and torn OR 1 pkg. frozen, chopped
1/4 tsp. ground black pepper
1/4 tsp. salt

Optional:
1/2 c. cooked small pasta OR
1 cubed potato

Directions:
Directions:
1.In a stockpot or Dutch oven, brown sausage with onion and garlic. Stir in broth, tomatoes and carrots, (optional potato) and season with salt and pepper. Reduce heat, cover and simmer 15 mins.
2. Stir in beans with liquid and zucchini. Cover and simmer another 15 mins. or until zucchini is tender.
3. Remove from heat and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Add in optional cooked pasta. Soup is ready to serve after 5 mins.
