3 1/2 cup flour
4 tsp baking powder
1/2 tsp baking soda
2 tsp salt
2/3 cup shortening - can substitute for canola oil
1 1/3 cup sugar
4 eggs beaten well
2 cups mashed banana

Directions:
Directions:
Combine top four ingredients, set aside.

Beat shortening (unless using oil) add sugar, and mix. Gradually add eggs and whisk. Slowly add flour mixture into shortening. Smash banana, and then add to mixture. Beat until smooth.

Bake 350º for 60-70 minutes
