Ingredients:  
1 lb crawfish tails, 1 large onion chopped, 2 cloves garlic mashed, 2 tbsp. finely chopped parsley, pepper to taste, 3 tbsp. bread crumbs, 1 bell pepper chopped, 1 large potato chopped, 1 stalk celery chopped, salt to taste, 1 -2 eggs.

Place oil in pan over medium heat. grind together the crawfish, bell pepper, onion, potato, garlic and celery. add parsley, then season. add eggs and mix. form into patties and roll in bread crumbs. fry in hot oil until golden brown. i put all ingredients to be ground together in the blender and use the grind cycle. if mixture is to moist to form patties you may need to add more bread crumbs or flour.
