1 1/2 lbs salmon fillets (no skin)
1/4 tsp salt
1/8 tsp pepper
1 (10oz) can diced tomatoes with lime juice and cilantro
1/2 cup mayonnaise

Directions:
Directions:
Cut salmon into 4 servings. Season with salt and pepper. Preheat large saute pan on medium-high 2-3 minutes. Combine tomatoes and mayonnaise in medium bowl. Coat both sides of salmon, using tongs, with the tomato mixture and place in saute pan. Add remaining tomato mixture to pan. Cover and cook 3-5 minutes on each side. Cook time will vary depending on the thickness of the fish filet. Fish should be opaque and separate easily with a fork.
