1 1/2 cups sugar
3 tbsp. corn starch
3 tbsp. all-purpose flour
dash salt
1 1/2 cups hot water
3 slightly beaten egg yolks
2 tbsp. butter or margarine
1/2 tsp grated lemon peel
1/3 cup lemon juice
1 - 9 inch pie shell, cooked

Directions:
In saucepan mix sugar, cornstarch, flour and salt. Gradually add hot water, stirring constantly. Cook and stir over high heat until mixture is boiling; reduce heat; cook and stir 2 minutes. Remove from heat. Stir small amount of hot mixture into egg yolks; then cook 2 more minutes, stirring constantly. Add butter, lemon peel, and juice; mix well; pour into pie shell.
