1 1/2 lbs. ground beef
1 large onion
1 can cream of celery soup
1 can cream of mushroom soup
1 can evaporated milk
1/2 lb. Velveeta
1 small can chopped Ortega chilies
1 jar pimiento
1 package corn tortillas
Cheddar cheese

Directions:
Directions:
Brown meat with onion and seasonings (salt and pepper). Reduce heat, add a little water, cover and simmer while you prepare other ingredients. Put next 6 ingredients in a large saucepan and simmer until cheese melts. Keep stirring to prevent sticking. Soften tortillas in oil and layer in 9X13 baking dish, sprinkle with meat, cheddar cheese, a few onions and pimientos. Pour sauce over top and bake at 350º for 30 minutes or until bubbly.
