Ingredients: 6 cornish hens, thawed salt and pepper or (season salt & course ground black pepper) butter or margarine I pkg wild rice (Uncle Ben's or Rice A Roni) sage, poultry seasoning to taste may rub on hens before cooking and also add to rice, if desired.

Directions:Preheat oven to 350 degrees. Season hens inside and out with salt and pepper and baste with melted butter. Bake breast side up in shallow pan covered for approximately 1 1/2-2 hours. Prepare wild rice according to pkg. directions. When hens are almost done, remove from oven and stuff with wild rice, seasoned with sage and poultry seasoning, if desired. (add any remaining rice around the hens) Return to oven uncovered for approximately 30 minutes or more until done and rice is hot. May need to increase oven temp. to 400º to brown. Note: Baking times are approximate please be your own judge as to when the hens are done. All ovens do not bake the same. |

Notes: At Thanksgiving or Christmas my mother-in-law, Bonnie Welch, would bake each family member their own individual stuffed cornish hen. May stuff hens with cornbread dressing in place of rice.
