3/4 cup maple syrup
1/3 cup balsamic vineegar
3 tbsp peeled minced fresh ginger
4 cloves garlic, peeled and minced

1 (3 pound) side of salmon, skin on, boned
3 to 4 tbsp olive oil

Directions:
Directions:
Prepare a charcoal fire or preheat gas grill for direct grilling over medium heat. In small bowl mix together maple syrup, balsamic vinegar, ginger, garlic, and salt. Using pastry brush, generously coat both sides of salmon with the olive oil. Place the salmon, flesh side down directly on the grill. Grill until the salmon loosens its grip on the grill,(7 to 8 minutes usually). Turn carefully, then spoon the topping over the cooked side of the fish. Grill for 4 to 5 minutes more, until the topping has become like a glaze, and the salmon flakes when poked with a fork, but is still opaque in the center. Remove from grill and serve immediately. NOTE: skin will stick to grill. Slide spatula between fillet and skin and lift off grill.
