Ingredients:  
1/2 medium head green cabbage, cored, and shredded (about 3 to 4 cups)
1 small read onion, peeled, halved and julienned
1 red or yellow bell pepper, seeded and julienned
1/2 cup granulated sugar
1/2 cup apple cider vinegar
1/ tsp kosher salt, or to taste
1/2 tsp celery seed
1/2 tsp dry mustard
1/4 cup plus 2 Tbs canola oil

Directions:
Directions:
1. Combine the cabbage, onion, pepper and sugar in a large bowl; toss to mix together.
2. Combine the vinegar, salt, celery seed, mustard and oil in a small sauce pan over medium-high heat. Bring to a boil, and simmer for 3 minutes.
3. Remove from the heat, and allow to cool to room temperature. Pour over the cabbage mixture, and toss to coat. Refrigerate for a least one hour before serving.
4. Before serving, taste and adjust the seasoning as needed with salt.
