peas or butterbeans- as many bushels as you want
water to cover shelled vegetables
freezer bags

First, shell your peas or beans. If you pick them early in the morning, you can sit in the house and watch the soaps while you shell. Wash them and pick out any deformed or bug bitten ones. Put them in a great big pot and cover with water. Bring to a boil for just a few minutes. You don't want them to cook - just blanche. Mama (Pearl) always had so many that we put them in tubs and cooked on the gas cooker in the yard! Once they are blanched, drain the boiling water and run some cold water over them to stop the cooking process. Then, fill the freezer bags and put them in the freezer! When you get a craving for peas or butterbeans, all you have to do is get out a package, put them in a boiler with enough water to cover, some bacon grease or side meat for seasoning and cook! Best served with hoe cakes of cornbread..
