1 1/2 Cups Wesson oil
1 tsp. salt
4 egg yolks
3 tsp. cinnamon
2 tsp. soda
3 cups grated carrots
2 cups sugar
4 egg whites
2 cups cake flour

Directions:
Directions:
Blend sugar, oil. Add egg yolks, blend. Stir in carrots. Add dry ingredients; fold in stiffly beaten egg whites. Bake 350º for 35-45 minutes.


Carrot Cake Frosting

2 cups powdered sugar
2 tsp. vanilla
1 8-oz pk. cream cheese
1 cup nuts

Mix well.
