Rhubarb Delight Recipe

Crust:
1 1/2 cup flour
1/2 cup shortening...I use butter
2 T. sugar
Filling:
4 T flour
1 1/4 cup sugar
3 egg yolks, slightly beaten
1/3 cup cream...I use half and half
4 cups chopped rhubarb
Meringue:
3 eggs
1/4 tsp salt
6 Tbsp sugar
1/2 tsp vanilla

Directions:
Directions:
Mix crust ingredients well, pat into 9x13 pan. Bake 325 for 20 minutes.
Cook filling mixture until rhubarb is done and mixture thickened. Cool. Pour over crust.
For Meringue: beat egg whites (at room temperature) and salt until they stand in formed peaks. Gradually add sugar, beating well (until you can't feel any sugar granules on the end of your tongue). Add vanilla.
Place on top of dessert and bake at 350 degrees for 12-15 minutes.
