Dry Ingredients:
1 c. old-fashioned oats (not instant)
1 c. whole-wheat flour
½ c. all-purpose flour
Optional: 1 scoop ground flax seed or wheat germ
2 tsp. baking powder
½ tsp. salt

Wet Ingredients:
2 large eggs
¾ c. packed dark brown sugar
¾ c. milk
¼ c. (1/2 a stick) butter, melted (or vegetable oil, but we always use butter)
1 tsp. vanilla extract

Directions:

Heat oven to 400ºF. Grease muffin cups or use paper baking cups.

Mix dry ingredients in a bowl.

In another bowl, whisk eggs and brown sugar. When smooth, whisk in milk, melted butter, and vanilla.

Pour over dry ingredients. Fold in with a rubber spatula, just until dry ingredients are moistened.

Scoop the batter in to muffin cups. Bake 15-25 minutes, or until springy to the touch in the center. Turn out onto a rack to cool.

Kathryn’s Tip: Double this recipe to fill a 9 ½ x 11 pan.
