1 prepared spice cake (or gingerbread)
1 lb. package of frozen berries (we prefer blackberries or mixed berries)
1/4 c. sugar
1 tbsp. lemon juice
2 c. cream, whipped and sweetened with a dash of vanilla
10 oz. jar of lime curd

Two days before you want to serve the trifle, bake (or buy) a spice cake (or gingerbread). After the cake is cooled cut it in 1 inch cubes and leave it uncovered so it will dry out a little. One day before you want to serve the trifle, prepare the berry sauce. Place the berries, sugar and lemon juice in a medium saucepan and cook until the berries are soft and the sugar has melted. Pour through a strainer into a bowl. Cool the sauce before you build the trifle. Build the trifle at least 12 hours before serving so the cake can soak up the berry juices. Fold half of the whipped cream into the chilled lime curd to lighten it up into a mousse. Put a layer of cake pieces at the base of a glass trifle bowl. Spoon a layer of the lime curd mixture over the cake, and then a layer of whipped cream, and then drizzle the berry sauce over the whipped cream. Set the next layer of cake pieces in the whipped cream and sauce, and then repeat the layers until the ingredients are used up, the last layer should be whipped cream. Chill before serving.

This is a long process but absolutely divine! Jacob adapted it from a Food Network recipe. The lime curd can be hard to find. In Utah we've found it at Harmon's.
