12 red sweet peppers
12 green sweet peppers
12 green tomatoes
12 medium onions
1 pod small hot red pepper
2 Tbsp. salt
3 c. cider vinegar
1 1/2 c. water
1 c. brown sugar
2 c. white sugar
1 Tbsp. Cloves
1 3 in. stick cinnamon
1 tsp. powdered cinnamon
1 Tbsp. celery seed
1 tsp. allspice
1 tsp. ginger
1 Tbsp. mustard seed

Wash peppers, tomatoes and onions. Grind on coarse cutter and sprinkle with salt. Cover with boiling water. Let stand 5 minutes. Drain, using a coarse strainer or thin cotton bag, and press dry. Bring to boil vinegar, sugar & spices. Add relish and let come to a boil. Boil gently for 10 minutes. Pour into hot jars & seal. Use enough vinegar, sugar and water to be sure and have juice. Makes 8-10 pints.
