2 lbs of fresh mushrooms, your choice
1 large onion or 2 small
2 or 3 cloves of garlic
3 or 4 T olive oil
1/2 t. thyme
2 t. Anchovy paste (buy it in a tube, keeps forever in the frig)
salt and pepper

Directions:
Directions:
Put olive oil in large saute pan, heat, add onions chopped in half rings, saute on low heat. Add chopped garlic, saute for a minute,
add mushrooms sliced, saute down. Add thyme, salt, pepper, and anchovy paste. Saute another minute to heat through. Remove from heat and store in covered dish in fridge.
