Ingredients: 2 sticks (8 oz.) butter, softened 1 c. packed dark brown sugar 3/4 c. granulated sugar 2 eggs 2 tsp. vanilla extract 3 c. flour 3/4 tsp. baking soda 1/2 tsp. salt 2 c. semisweet chocolate chips (2 cups) 1 c. chopped walnut or macadamia nuts, optional

Directions:Beat together butter and sugars with an electric mixer until light and fluffy. Add eggs and vanilla, continue beating 2 minutes. Mix in flour, baking soda, and salt until well blended, 1 to 2 minutes. Stir in chocolate chips and nuts. Drop by generous tbsp. 2 inches apart on foil-lined cookie sheets (about 12 to pan). Flatten dough rounds slightly with finger-tips. Bake at 350º for 8 to 10 minutes, or until very light golden. Do not over bake or cookies will be too hard when cool. Let stand 5 minutes, then remove to wire racks to let cool completely. |

Notes: It took my awhile to learn that my husband does NOT like cookies with oatmeal in them. As for me, I love oatmeal cookies, but this is our favorite "classic" chocolate chip cookie. This recipe comes from the recipe book, "365 Great Chocolate Desserts," given to me for my wedding. When we were first married, and didn't have a very well stocked pantry, I spent many Sundays looking through this book wishing I had the ingredients to bake something with chocolate. Now we keep our house stocked with chocolate at all times!
