Rhubarb mix
1/4 c cold butter (no substitutions)
1/2 c packed brown sugar
1 c chopped rhubarb (fresh or frozen, thawed)

Batter
1/3 c softened butter or margarine
1/2 c sugar
1 egg
1 1/2 c flour
2 t baking powder
1/2 t salt
1/4 t ground nutmeg
1/2 c cream

Directions:
Directions:
1. In a bowl, cut butter into brown sugar til crumbly. Stir in rhubarb. Spoon mixture evenly into 12 WELL GREASED muffin cups. Set aside.
2. In a mixer bowl, cream butter and sugar. Beat in egg.
3. Combine dry ingredients and add to creamed mixture alternately with cream.
4. Spoon batter over rhubarb, filling cups to about 3/4 full.
5. Bake 350º for 15-20 minutes. Cool 5 minutes and invert onto serving tray. Serve warm.
