1 lb. white beans
2 quarts of water
1 onion chopped
1 clove garlic minced
1 ham hock or ham bone
1 tomato peeled and chopped
1/2 tsp. thyme
1 tbsp. wine vinegar
salt and pepper to taste

Directions:
Directions:
Soak beans in water over night. Saute onions and garlic add to crock pot along with beans, water, and all other ingredients except vinegar salt and pepper. Cook beans with ham hock on low for 10-12 hours. Add a handful of vegetable soup mix. At serving time stir in vinegar and mash some beans slightly and add salt and pepper to taste.

Louise loved to cook soup and this meal is perfect if you are working longs hours. It will be ready when you return and it makes the whole house smell like you have been cooking all day. What better way to come home from working a long hard day then to a nice bowl of beans.
