Choose the meat of your choice and use the below temperatures as a guideline. Every oven is different so you will have to become familar with yours.

Beef:
Med-Rare: Final temperature 140-145ºF
Remove from oven at 135ºF, let stand
10 minutes.
Medium: Final temperature 160ºF
Remove from oven at 150ºF, let stand
10 minutes.
Well Done: Final temperature 170º, no resting
needed

Pork Roast: Final temperature should be 165º

Chicken: Final temperature 175
Roasting time is 1/2 hr per pound at
375ºF.

Turkey: Final temperature 180ºF: Roasting time
is about 1/2 hr per pound at 325º F

Ham: Uncooked Final temperature 140º F
