Leftover Ham or Roast Beef
Leftover Baked Potatoes or frozen hash browns
Olive oil
Salt and Pepper to taste

Shred a couple cups of ham or roast beef that is left over and put in black cast iron skillet or non stick pan of your choice. Add olive oil to start the process, a couple tbsp at least. Start browniing meat, add cubed or slice baked potatoes or hash browns and cook on low heat until potatoes and meat start browning or carmelizing. Serve for breakfast, lunch or supper. This is a big hit with my family on the day after family dinners. You can add a couple tbsp of butter if you like while browning.
