2 cups sugar
4 eggs
1 1/2 cup Wesson oil
2 cups flour
2 teaspoon cinnamon
2 teaspoon soda
1 teaspoon salt
2 cups grated carrots (use a little more)
1/2 cup of nuts

Icing:
1 lb. powdered sugar
1/2 stick butter
8 oz. cream cheese
1 teaspoon vanilla

Directions:
Directions:
Cream 2 cups sugar, 1 1/2 cup Wesson Oil. Add 4 eggs, one at a time. Mix 2 cups of flour, 2 t. cinnamon, 2 tsp. soda and 1 t. salt. Add dry ingredients to creamed ingredients. Add 2 cups grated carrots and 1/2 cup nuts. Bake in two layers at 350º for about 30 minutes.

Combine icing ingredients and frost cake. Sprinkle top with pecans.
