2 tbsp. flour
½ tsp salt
1 ½ tsp pumpkin pie spice (or a combination of cinnamon, cloves, and nutmeg)
1 ½ cups pumpkin
½ stick margarine, melted
1 lg. egg
1 cup evaporated milk
1 ¼ cup sugar
1 (9-inch) pie shell

Sift dry ingredients.
Mix dry ingredients with wet ingredients.
Bake at 425º for 8 minutes.
Reduce temperature to 350º.
Bake 45 minutes longer, until done but not entirely firm. Do not overbake.

Since you have to bake one at least once a year, a good pumpkin pie recipe is an absolute must. For years I was a lot like Goldilocks – every pie was just too moist, too dry, too spicy, or not spicy enough. Here is one that is just right.
