Ingredients: Dough ingredients for a single batch (3 pizzas): 1 ¾ c. water 2 ¼ t. yeast 2 T. olive oil 1 ½ t. salt 4 c. flour
Dough ingredients for a double batch (6 pizzas): 3 ½ c. water 4 ½ t. yeast 4 T. olive oil 3 t. salt 8 c. flour

Directions:Make the dough in advance:
1. Heat 1 ¾ c. water (it should be very warm, but not hot). 2. Add 2 ¼ t. yeast. Let it sit for a minute. 3. Add 2 T. olive oil and 1 ½ t. salt. 4. Add 4 cups bread flour slowly. 5. Mix on medium speed until the dough is smooth and elastic. 6. Use a rubber spatula to turn onto a floured board. Knead the dough a few times until it forms a smooth round ball. 7. Put the dough in a deep, oiled bowl and cover with plastic wrap. 8. Make the sign of the cross over the dough (Italians swear that if you don't do this, the dough will not rise). 9. Let rise in a warm place until doubled in size (about 2 hours). Put the dough in the fridge if you do not need it immediately after it is done rising.
Make the pizza right before you want to eat it:
1. Preheat the oven to 500 degrees with the pizza stone in the oven (at least 30 minutes). 2. Roll the dough about into a circle on a floured board (about 1/4 inch thick). 3. Remove the pizza stone from the oven and transfer the dough to the pizza stone. 4. Spread about 5 T. of sauce on the dough (Sauce recipe: blend one can of tomatoes with a hand blender). 5. Put cheese and toppings on pizza. The best type of cheese to use is fresh mozzarella (you can buy it at the deli at some grocery stores and at Costco). 6. Sprinkle entire pizza with olive oil and salt. 7. Cook for 6-9 minutes. Watch the pizza carefully. Remove when the cheese is melted but before it gets brown. |
