1 1/2 c. milk, scalded
1 tblsp. shortening
1 tblsp. salt
1 tblsp. sugar
1 tblsp. caraway seed
1 pkg. active dry yeast
1/2 c. warm water
1 c. rye flour
5 cups flour (about)
1 egg white, slightly beaten

Directions:
Directions:
Combine scalded milk, shortening, salt, sugar and caraway seed in a bowl; stir until blended. Dissolve yeast in warm water. When milk mixture is lukewarm, stir in softened yeast. Add the rye flour and beat thoroughly. Mix in enough flour until dough is moderately stiff. Let rise until doubled in bulk. Work with about 1/3 of dough at a time; roll out on lightly floured surface into a round 1/8" thick. Cut into pie-shaped pieces. Roll up beginning at wide end. Finished rolls should be about 5" long and 1/2" thick. Place on lightly greased baking sheets. point side down. Brush lightly with egg white and sprinkle surface with coarse salt. Sprinkle with additional caraway seed if desired. Bake at 400ºF. about 10 minutes. Makes about 3 dozen sticks.
