Almond White Chocolate Chunk Cookies



2 1/4 cups flour

1 tsp baking soda

1/2 tsp salt

1 cup butter, softened but still chilled

1 1/2 cups sugar

2 eggs

1 1/2 tsp pure almond extract

8 oz white baking chocolate chips

1 1/3 cups slivered almonds (I toast about half of them for extra flavor)

Oven at 375

Mix flour, baking soda and salt in bowl, set aside.

Beat butter and sugar in large bowl with mixer on medium speed until light and fluffy.

Add eggs and extract, beat until well blended. Gradually beat in flour mix and then

stir in chocolate and almonds. Drop by heaping Tbls. onto ungreased baking sheet.

Bake about 10-11 minutes or until edges are lightly browned. Cool on sheets 1 minute

before removing to wire racks.

(Makes about 5 doz or so and they freeze great)
