1/2 package of bacon (sliced)
2 cups of celery
1 medium onion (chopped)
4 tablespoons of garlic (minced)
1 bell pepper (optional)
1 teaspoon of paprika
1 teaspoon of old bay seasoning (any fish seasoning if you are adding shrimp to your dish)
1/2 lb. to 1 lb. of chorizo sausage
1/2 lb. to 1 lb. of diced chicken (or pork)
2 cups of chicken broth
20 oz. can diced tomatoes
1 cup of uncooked rice
1 lb. of shrimp

Step 1: Cook bacon until almost crispy. Add celery, onion, garlic, pepper, paprika and bay seasoning. Cook until bacon is crispy (4-5 minutes)
Step 2: Add meat and let simmer for 5-8 minutes.
Step 3: Add chicken broth and tomatoes. Make sure you have enough liquid to cover ingredients. Feel free to add water if needed. Stir well, cover, and let simmer for about 15-20 minutes.
Step 4: Add rice. Make sure you have enough liquid in the pot, cover the pot, and cook it for about 20 minutes. (If you are using brown rice, check instructions on the package; you might need to cook it longer.)
Step 5: Add shrimp and cook for 3-5 minutes with the lid off until shrimp is pink and cooked through. Stir occasionally.
Serve!!!!
