Corn Tortillas (soft uncooked)
12 eggs
1 tomato finely diced
1 cup finely chopped onion
½ cup finely chopped green pepper
4 cups finely chopped broccoli
2 cups fresh spinach
½ cup grated cheese
½ cup cottage cheese
½ cup salsa
¼ t garlic powder
1/8 cup olive oil
2 cups water
salt and pepper to taste
sour cream and salsa as spreads

Directions:
Directions:
Fry 12 to 15 corn tortilla shells in a few table spoons of olive oil or canola oil, turning them over on both sides until done (lightly brown but not crisp, 30 to 40 seconds in hot oil). Simmer onion, green pepper, broccoli, and tomato in a large frying pan…with the olive oil and 1 cup of the water. Keep adding the other cup of water as it evaporates and as needed until the vegetables are done to your liking, (usually soft). The water should be almost gone before you add the eggs. Add the eggs and salt, pepper and garlic powder. Continue to cook until the eggs are not quite done,…then quickly add the fresh spinach, cheese, cottage cheese and salsa, folding until the spinach is soft and the cheese is melted. Serve on folded corn tortillas topped with salsa and sour cream.

This is a special recipe that Roger and I developed over the years and it is packed with nutrition. We eat it for breakfast, lunch and dinner on the day we make it. Sometimes it lasts two days.
This recipe became a favorite with the family at the golf course Family Reunion in Eagle Mountain at our home, a few years ago. Kyle loved it especially and so this is entered in the family cookbook especially for Kyle.
