(1) 2 lb. boneless pork loin blade roast
2 large onions,quartered
3 fresh jalapeņo peppers,cut up
8 cloves of garlic minced
2 tsp. ground coriander
2 tsp. ground cumin
2 tsp. dried oregano,crushed

Directions:
Directions:
1. Trim fat from the meat. Place the roast in a large saucepan or Dutch oven and add enough water to nearly cover the roast. Stir in the onions,jalapeno peppers,garlic,coriander,cumin, oregano, 1/2 tsp. of salt and 1/2 tsp of ground black pepper. Bring to a boil, reduce heat and simmer covered, for 2+1/2 hrs or until very tender.
2. Remove the meat from the liquid with a slotted spoon and discard the cooking liquid. When the meat is cool enough to handle shred the meat. Use as a filling for tocos or tamales. Makes 8 servings,about 3 cups of cooked meat.

Crockery-cooker directions: Trim the fat from the meat,cut the meat to fit into the cooker. Add 1 c of water and the remaining ingredients. Cover and cook on low heat setting for 8-10 hours or on high for 4-5 hours. continue as directed in the recipe.
