1 baked pastry shell
1 cup whipping cream
1 cup semisweet chocolate pieces (6 oz)
1/3 cup butter
1/3 cup sugar
2 beaten egg yolks
3 tablespoons crème de cacao or whipping cream (I used whipping cream)
1 cup whipping cream

1. Prepare pastry shell. Set aside.
2. In heavy saucepan, combine 1 cup shipping cream, chocolate pieces, butter and sugar. Cook over low heat, stirring CONSTANTLY (I made that mistake once. It will clump badly if you don’t constantly stir), until chocolate is melted (about 10 minutes). Remove from heat.
3. Gradually stir half the chocolate mixture into beaten egg yolks. Return egg mixture to chocolate mixture in saucepan. Cook over medium-low heat, stirring constantly, until mixture is slightly thick and begins to bubble (about 5 minutes). Stir in the crème de cacao (or 3 T whipping cream).
4. Remove saucepan from heat and place in a bowl of ice water, stirring occasionally, until the mixture stiffens and becomes stiff to stir (about 20 minutes – I added ice twice to keep the water really cold). Transfer chocolate mixture to a medium mixing bowl.
6. Beat cooled chocolate mixture with an electric mixer on medium to high speed for 2 to 3 minutes or until light and fluffy. Spread filling in the baked pastry shell. Cover and refrigerate for 5 to 24h ours. To serve, top with remaining whip cream. Drizzle caramel ice cream topping over, if desired.

This is as naughty as it gets. You are not even allowed to THINK about the calories and fat in this one, but oh! It is worth it! There isn’t much of a history to this one, just our favorite decadent dessert around here.
