2 Large Portobello Mushrooms
6 tablespoons Vegetable Oil
1 Small Onion rough chopped
1 Red Pepper coarsely chopped
2 Green Onions chopped
2 Cups of Chinese Cabbage chopped
3 Cloves of Garlic minced
1 Pkg of Firm Tofu cut in bite-sized pieces
1 tablespoon of Rice Cooking Wine
1 tablespoon Hoisin Sauce
1 tablespoon Soy Sauce
1 tablespoon Asian Chili Sauce
1 tablespoon Sesame Oil
4 tablespoons Corn Starch
1/2 cup water or chicken broth

Cut the stem off the Portobello mushroom and remove the hard end. Scrape the dark gills from the bottom of the caps with a spoon. Halve the cap and then slice in 1/4 inch thick slices. Set aside. Coat the tofu cubes with corn starch and fry in 4 tablespoons oil until golden. The corn starch coating makes the tofu firm and meat-like in consistency. Remove from skillet or wok. Wipe the pan. Add 2 tablespoons oil and over high heat stir-fry the chopped onion for 30 seconds, add the garlic and fry for 15 seconds, then add the mushroom pieces and stir-fry until softened, 1-2 minutes. Add the fried tofu, rice wine and Soy Sauce and cook until dry. Stir in the Hoisin and Chili Sauces, stir-fry for 30 seconds. Add the Red Pepper and Cabbage, stirring until coated. Add 1/2 cup of water (vegetarian) or chicken broth (if a little meat is not a problem); cover and cook until the vegetables are tender-crisp, about 3 minutes. Uncover and reduce liquid until dry. Add the chopped green onion and sesame oil. Serve over brown rice or noodles.

This is a great vegetarian alternative for Chinese style stir-fries. Cubes of Chicken or Prawns could be added for a meat alternative. Simply treat the meat as tofu and pre-cook before adding the final sauces.
