Small individual pumpkins (one for each person)
1 onion
2 Tbsp oil
1 1/2 - 2 lbs of ground turkey (you can also use beef if you wish)
2 Tbsp soy sauce
2 Tbsp Brown sugar
Two Cans Sliced mushrooms
1 can cream of chicken soup
1 1/2 Cups cooked brown rice
1 can sliced water chestnuts

Cut off the tops of the pumpkins and thoroughly clean out seeds and pulp. Preheat oven to 350. In large Skillet, Saute onion in oil and brown the ground turkey. Drain the meat and add soy sauce, brown sugar, and soup. Simmer for 10 minutes then add cooked rice mushrooms and water chestnuts. Spoon mixture into prepared pumpkins and replace pumpkin top. Place pumpkins on baking sheet and bake for about an hour (until pumpkin meat is tender). Eat right out of the pumpkin scooping spoonfuls of pumpkin meat with the meat sauce. mmmmmmmm!

This recipe is one that we do every year for Halloween. It is warm, healthy and hearty after a cold night of trick or treating and one of Breckann's favorites.
