3 c. all purpose flour
2 c. sugar
1 t. salt
1 t. baking soda
1 t. cinnamon
1 t. vanilla
3 eggs beaten
1 8 oz. can crushed pineapple (undrained)
2 c. chopped pecans, walnuts or hickory nuts
2 c. mashed ripe bananas
1 1/2 c. canola oil

Directions:
Directions:
Combine all dry ing. in a large mixing bowl. Add eggs and oil. Stir until moist; stir in vanilla, pineapple, nuts and bananas. Spoon into 3 medium loaf pans. Place pans on cookie sheet in oven. (to keep mixture from running over into oven)
Bake @ 350º fro 45min - 1hr. Test for doness by touching middle of each loaf. If it is firm and springs back, they are done.
