1 egg
1 1/4 c. packed brown sugar
1 c. buttermilk
1/2 c. vegetable oil
2 t. vanilla extract
2 1/2 c. all-purpose flour
1 t. baking soda
1 t. baking powder
1/2 t. salt
1 1/2 c. diced fresh or frozen rhubarb
1/2 c. chopped walnute

TOPPING:
1/3 c. sugar
1 t. ground cinnamon
1 t. butter, melted

Directions:
1 In a bowl, beat egg. Add brown sugar,
buttermilk, oil and vanilla; beat for 1 minute.
2. Combine dry ingredients; stir into sugar mixture
just until moistened.
3. Fold in rhubarb and walnuts.
4. Fill greased or paper-lined muffin cups three-
fourths full.
5. Combine topping ingredients; sprinkle over
muffins.
6. Bake at 375 degrees for 20-25 minutes or until
muffins test done.
