7 large sweet potatoes, peeled and cubed (I
peel and cube my sweet potatoes after boiling
them. It's much easier)
1/4 c. butter
1/2 c. orange marmalade
1/4 c. orange juice
1/4 c. packed brown sugar
2 t. salt
1 t. ground ginger

TOPPING:
12 oatmeal cookies, crumbled
6 T. butter, softened

Directions:
Directions:
1. Place sweet potatoes in a Dutch oven and
cover with water; bring to a boil. Reduce heat;
cover and cook just until tender, about 15-20
minutes. Check with a toothpick. Drain well.
2. Mash potatoes with butter. Add marmalade,
orange juice, brown sugar, salt and ginger.
Transfer to a greased 13" X 9" X 2" baking dish.
3. Toss cookie crumbs with butter; sprinkle over
the top.
4. Bake, uncovered, at 400 degrees for 20
minutes until browned. Let stand for 15
minutes before serving.
