1lb. cooked rotini pasta
3/4 c. pitted kalamata olives, cut in half
1 small red onion, finely diced
3/4 c. quartered artichoke hearts
1 c. crumbled feta cheese
2/3 c. olive oil
1/3 c. balsamic vinegar
2 tbsp. dijon mustard
1 tbsp. sugar
1/2 tsp. salt

Directions:
Directions:
In a large mixing bowl, combine pasta, kalamata olives, diced onions, artichoke hearts and feta. Toss to mix. 

Dressing: In a screw-top jar or small bowl, combine vinegar, mustard, salt and sugar. Then add olive oil while mixing rapidly to emulsify. Pour over pasta, toss and serve. Enjoy!
