1 to 1 1/2 pounds new potatoes
1/4 pound of bacon
1 medium onion coarsely chopped
1 stalk of celery, chopped
1/2 tsp sugar
1/8 tsp pepper
1 tsp salt
1/2 cup of water
1/2 cup cider vinegar

Directions:
Directions:
Scrub the potatoes and cook in boiling salted water until tender. Drain and while hot, skin the potatoes and cut into 1/4 inch slices.

Cook the bacon until it is crisp. Remove the bacon and cook the onion and celery until it is tender and transparent.

Drain off all but one tbsp of bacon fat. Add flour, sugar, salt and pepper to skillet and stir until slightly browned. Add vinegar and water and cook until the mixture is slightly thickened. Add the bacon, celery and onion.

Pour hot dressing over potatoes and stir gently to blend. The potatoes should look shiny.

When I peeled the freshly boiled potatoes, the skins came off rather easily. This was a great recipe to put in a crock pot and bring to any gathering.
