10 ounces fresh baby spinach
8 ounces any other greens of your choice
3 oranges sectioned or equivalent mandarin oranges
1/2 bunch asparagus, blanched and cut into 1-inch pieces
1 1/2 C sliced strawberries
1 C blueberries
4 C shredded rotisserie chicken

Honey-Balsamic Vinaigrette Dressing:
1/2 C balsamic vinegar
3 T honey
1 T soy sauce
1/8 tsp ground red pepper
2/3 C extra-virgin olive oil

Directions:
Directions:
In a large bowl, combine spinach, greens, orange sections, asparagus, strawberries, and blueberries. Top with shredded chicken. Serve with desired amount of Honey-Balsamic Vinaigrette Dressing. For dressing: In the container of a blender, combine balsamic vinegar, honey, soy sauce, and ground red pepper. Process until combined. Add oil; process until combined. Cover and chill up to 3 days.
