1 cup long grain rice
2 (10 oz.) cans diced tomatoes w/green chilies, undrained
1 cup water
1 tsp. salt
2/3 cup pimento stuffed olives, sliced
1/4 cup vegetable oil
1/2 cup onions, chopped
1 cup Monterey Jack cheese

Directions:
Directions:
Combine all ingredients in shallow greased 2 quart casserole.
Cover and bake at 350º for 45 minutes.
Stir well and bake uncovered for an additional 15 minutes, or until the liquid is absorbed and rice is tender.
