1 lb. ground beef
2 (16 oz.) cans stewed tomatoes, plus 1 can water
1 c. chopped onions
1 c. cubed potatoes
1 c. carrots, sliced or chunked
1 c. sliced mushrooms
1/2 c. diced celery
1/4 c. long grain rice
1 bay leaf
1/2 tsp. thyme
1/4 tsp. each basil and oregano
salt/pepper to taste
grated cheese

Directions:
Directions:
Brown ground beef in large saucepan and drain. Add all remaining ingredients except cheese. Cover and cook until rice and vegetables are done. Serve topped with grated cheese.
I sometimes substitute barley for the rice.
