3/4 cup Butter, softened
2 1/4 cups firmly packed brown sugar
1 1/2 cups sweet potato puree (recipe follows)
2 eggs
2 1/2 cups flour
3/4 tsp salt
3/4 tsp nutmeg
3/4 tsp ground Ginger
1 1/2 tsp baking soda
1 Tbsp ground cinnamon
1 dash of ground cloves
1/2 cup water

Scrub 1 medium-large sweet potato; cut into 2" pieces, place in a small saucepan, cover with water. Cook 25 minutes before pureeing in food processor. Remove puree.

Preheat oven to 375º. Butter and flour loaf pan. Mix cream, butter and sugar until light and fluffy. Stir in puree and egg. Sift together dry ingredients. Stir in half dry ingredients; add water, mix, add remaining ingredients.
Bake until dry on top and skewer comes out clean. about 35 minutes. Serve warm.
