1 lb. ground beef (lean)
1 med. onion
1 can mixed vegetables
1 can creamed corn
1 can stewed tomatoes
1 can diced tomatoes and green chilies
1 pkg. Spanish rice
1 1/2 c. water
1 pkg. corn muffin mix

Directions:
Directions:
In a deep skillet, cook ground beef and onion until meat is brown and onion is tender. Stir in mixed vegetables, corn, and undrained tomatoes, dry rice mix and water. Bring to boil--reduce heat. Cover and simmer about 20 minutes or until rice is tender.
Meanwhile, if desired, prepare muffing mix according to package. Serve with soup
